- 4 bell peppers
- 7 oz ground beef
- 1/2 cup mozzarella
- 3 boiled potatoes
- 1/2 cup pecorino cheese
- 1 egg
- to taste fine salt
- to taste breadcrumbs
- to taste poppy seeds
- 2 boiled carrots
- to taste extra virgin olive oil

Steps for preparing the deliciously stuffed bell peppers
To prepare the delicious stuffed bell peppers, start by washing the peppers thoroughly and cutting the top off with a steady-handed knife. Cut around the stem and lift. Then remove the seeds and ribs by inserting a small knife inside and rotating it, and eliminate any remaining seeds on the inner wall of the vegetable.
In a bowl, add the ingredients, such as the boiled potatoes and carrots passed with a potato masher, the egg, ground beef, mozzarella cut into small pieces, grated pecorino, fine salt, a sprinkle of poppy seeds, and mix everything until a homogeneous mixture is obtained.
Then, arrange the peppers on a tray lined with parchment paper, and, with the help of a fork, stuff them generously.
Sprinkle them with breadcrumbs and a drizzle of extra virgin olive oil, then cover with the top without pressing. Bake in a static oven at 392°F for about 45 minutes. In an air fryer at 392°F for about 18 minutes
Once cooked, remove from the oven, let it cool slightly and serve… enjoy your meal!
Storage and notes
Stuffed peppers can be stored in the fridge for two days in an airtight container.
If you don’t want to stuff them whole, you can cut the peppers in half.
You can also use other types of minced meat such as mixed.
