The Chicken and vegetable bites in air fryer are delicious, tender, and light. Moreover, they are very easy to prepare! I used zucchini and tomatoes, which I already had at home, but next time I will try with other vegetables.

Ingredients for Chicken Bites with Vegetables
- 14 oz chicken breast
- 2 cups zucchini
- 3/4 cup cherry tomatoes
- 1/4 cup breadcrumbs
- 2 tsp extra virgin olive oil (to be sprayed)
- 1 pinch salt
- 1 pinch black pepper
- 1 pinch garlic powder
- 1 pinch dried oregano

Steps for Chicken Bites with Vegetables
1 – Cut the chicken breast into cubes, more or less the same size, then pour it into a bowl
2 – Dice the previously washed zucchini into pieces of similar size. Slice the cherry tomatoes in half (also previously washed). Add everything to the bowl with the chicken.
3 – Now, season everything with olive oil, salt, pepper, garlic powder, oregano, and breadcrumbs. Mix with a spoon.
4 – Preheat the air fryer; when it’s ready, take the basket, place a pre-cut sheet of parchment paper inside it, then pour in the chicken bites with vegetables and start cooking.
COOKING
In air fryer: Preheat it to 356°F using the preheat program, then insert the basket and cook, still at 356°F, for 20 minutes. No need to turn halfway through cooking.
In traditional oven: Preheat the oven to 374°F static, when it reaches the temperature, bake the bites and cook them for 30 minutes.
Notes
It’s better to get the whole chicken breast so that you can cut it into cubes.
You can also add grated Parmesan cheese along with the breadcrumbs.
I recommend consuming them immediately; they are tastier!
They can be stored in the refrigerator for a couple of days.
