FRITTERS WITH JAM the perfect recipe for Carnival

Fritters with raspberry jam light and delicious. The best thing about Carnival is the sweets! Chiacchiere, castagnole, and many fritters that are always impossible to resist. The recipe I want to tell you about today is for light and crispy Chiacchiere filled with delicious raspberry jam. The dough is the classic Chiacchiere dough, and for the filling, you can choose the flavor of jam or marmalade you prefer, or choose to use Nutella for a super indulgence. I suggest not missing the recipe for the Migliaccio Napoletano, a creamy cake typical of Carnival. I fried them as per tradition, but if you prefer, you can also choose to bake them for a lighter but equally special treat. So let’s head to the kitchen and prepare some delicious Carnival Chiacchiere with jam

  • 1.4 oz sugar
  • 1.75 cups flour
  • 2 tbsps butter (melted)
  • 3 tbsps limoncello
  • 1 tsp baking powder
  • 1/2 lemon zest (untreated)
  • 6.35 oz raspberry jam
  • 1.25 cups vegetable oil
  • to taste powdered sugar (for decoration)

Tools needed to prepare Fritters with jam

  • Pasta roller
  • Cutters

How to make Chiacchiere with jam

  • You can prepare the dough either by hand or with the help of a mixer. In a bowl, mix the egg with the sugar. Then add the melted butter and limoncello. Continue the preparation by gradually adding the sifted flour, baking powder, and the grated zest of half an untreated lemon.

  • First, mix with a fork and then knead with your hands until you have a soft but not sticky dough. Form a dough ball, wrap it in plastic wrap, and let it rest for an hour at room temperature.

  • Take the dough. Take a portion and roll it out into a very thin sheet. It’s better to use a pasta roller, gradually moving from the widest setting to the narrowest and folding the dough 3-4 times before rolling it out again.

  • Cut out circles of dough from the thin sheets using a 3-inch round cutter. Brush water around the edges. Place a teaspoon of raspberry jam or another flavor in the center. Fold into a half-moon and press around the edges to seal.

  • Prepare them all in the same way, re-kneading the dough scraps. Now, just fry them in hot oil until golden on all sides. Drain them on paper towels. Let them cool and sprinkle generously with powdered sugar.

See you tomorrow with a new recipe, hugs, Loredana

Loredana’s Tips

If you prefer, you can replace limoncello with the same amount of grappa or simply white wine

For the jam, you can choose the flavor you prefer or replace it with Nutella or pastry cream

For decoration, instead of powdered sugar, they are also delicious with a drizzle of honey
