Mini Pizzas, Not the Usual Snack

Not the usual snack, not the usual focaccia or the usual brioche for a mid-morning snack or break, but delicious mini pizzas, crispy and tasty, homemade with puff pastry, tomato, and mozzarella.

They are prepared in just a few minutes, loved by both adults and children, and you make a great impression if you serve them at birthdays, aperitifs, banquets, or as an accompaniment to a great aperitif.

And in the hot season, they are ideal for taking on a day trip. In short, any occasion is a good one to enjoy them.

I often make them as a snack when my children invite their friends over, and I must say they always appreciate them a lot; in fact, they disappear in an instant!

With one puff pastry at home, it’s really quick to bake tasty recipes.

Ingredients for making mini pizzas, not the usual snack

  • 1 puff pastry
  • 2 tomatoes
  • 2 mozzarellas
  • to taste dried oregano
  • 12 pickled capers
  • to taste fine salt
  • to taste extra virgin olive oil

Steps for making mini pizzas not the usual snack

To prepare the delicious mini pizzas, not the usual snack, we begin by rolling out the rectangular puff pastry, equipped with parchment paper, on a surface or directly on a baking tray , and wash the tomatoes well. Then cut them in half first and then into slices, not too thin, and set aside.

  • Then divide the puff pastry into four equal parts and, with a fork, press the center of the rectangles creating grooves, so that the pastry does not rise during cooking. Fill them with tomato slices placed slightly overlapping, as in the photo.

    Season with fine salt, a sprinkle of dried oregano, and three capers for each.

  • Finally, cut the mozzarellas into pieces and add them on top of the tomatoes. Bake at 356°F for about 20 minutes and, once cooking is complete, drizzle with a bit of extra virgin olive oil and

  • serve hot… but they are also excellent cold!

Storage and notes

The mini pizzas can be stored in a cool, dry place for two days. In the hot season, store in the refrigerator.
