SOFT AMARETTI the simple and perfect recipe

Soft amaretti so good they melt in your mouth. How good are amaretti! Among many Almond Desserts, they are always my favorite. Just 3 ingredients and in a few minutes, you can prepare soft and delicious Almond Cookies . My recipe is very simple and perfect even for the clumsiest in the kitchen, and you can decorate your cookies with candied cherries as I did or with an almond or half a teaspoon of jam. Simple to prepare, and they always win everyone over. I find them perfect also to package in transparent bags for gifts that are sure to be appreciated by everyone. Ingredients for the Soft Amaretti

  • 1 1/2 cups almonds
  • 1/2 cup sugar
  • 2 egg whites
  • 1/2 lemon zest (untreated)
  • 10 candied cherries
  • as needed powdered sugar (for decorating)

How to make Soft Amaretti

  • Transfer the almonds and sugar into a mixer or blender and finely chop them. I prefer to use almonds with their skin, but if you prefer, peel them first or use already peeled almonds.

  • Lightly beat the 2 egg whites with a whisk until they are fluffy and foamy. Mix them in a bowl with the almonds and sugar. Also, add half the grated zest of an untreated lemon and mix well with a spatula.

  • Transfer the mixture into a piping bag with a large star nozzle. Line a baking sheet with parchment paper. Form the cookies slightly spaced on the parchment paper. I made small circles, they will spread during baking.

  • Place half a candied cherry in the center. Bake the Almond Amaretti in a preheated static oven at 375°F for 12-14 minutes. Let them cool before transferring to a plate because they are very soft just out of the oven. Dust them with powdered sugar if desired.
