Ingredients for Creamy Trofie with Speck

  • 1.1 lbs trofie (fresh)
  • 3.5 oz speck
  • 5.6 oz spreadable cheese (like Philadelphia)
  • 1.4 oz walnut kernels
  • 1.4 oz grated Parmesan cheese
  • 3 tbsps extra virgin olive oil
  • 1 pinch pepper
  • to taste salt

How to prepare the Pasta with Walnuts and Speck

  • Cook the fresh trofie, or another pasta shape, in salted boiling water. While the pasta is cooking, prepare the sauce.

  • Pour the extra virgin olive oil into a pan. Add the speck cut into strips and let it sauté over medium heat for 1-2 minutes, stirring often with a wooden spoon.

  • Add the creamy spreadable cheese to the pan and ladles of the pasta cooking water. Mix well.

  • Drain the pasta simply with a skimmer and pour it directly into the pan with the sauce.

  • Add the grated Parmesan cheese, coarsely chopped walnuts, and a pinch of pepper. Mix well and, if needed, add a little more pasta cooking water. Serve the Trofie with Walnuts and Speck still hot.
