Roman Doughnuts

The Roman doughnuts are a homemade dessert, traditionally prepared for the Carnival period, although they can be found year-round in bakeries, cafes, and pastry shops, and are mainly consumed for breakfast or a snack. The stuffed version is called “bombe” and is filled with custard or chocolate, loved by everyone, young and old. This recipe is taken from “Tradition in Evolution” by Leonardo Di Carlo. ROMAN DOUGHNUTS

Ingredients

  • 4 cups flour (W380)
  • 4 cups flour (W180)
  • 3 tbsps compressed yeast (1 tsp dry)
  • 1 1/4 cups milk (water)
  • 3/4 cups sugar
  • 5 eggs
  • 2/3 cups butter (1/2 cup vegetable oil)
  • 1/2 tsp vanilla
  • 3 tsp orange zest
  • 1 tbsp salt
  • 1 qt peanut oil (for frying)

Tools

  • 1 Stand Mixer
  • 1 Pastry Board
  • 1 Pot

Steps

  • Pour into the stand mixer’s bowl the flours, aromas, yeast, eggs, and 1/3 of the sugar. Mix, and once large crumbs form, add the remaining sugar and water. Work until you obtain a smooth and elastic dough, about 8-10 minutes.

    Then add the oil in a stream and the salt
    Continue working until fully absorbed.
    Let the dough become well incorporated.

    Let rise for two hours at 75°-79°F covered with plastic wrap.
    Transfer the dough onto a lightly floured pastry board.

    Take pieces of dough weighing 2 1/2 oz and shape into doughnuts. Let rise covered at 79°F for about 2 hours.

    Fry in plenty of oil at 338°F, turning them twice, drain with a slotted spoon onto paper towels.
    Sprinkle with granulated sugar immediately.

Tips

Alternatively, after the first rising, let rest in the fridge overnight.
The next day, shape, let rise, and fry.
