Lentil Broth

Lentil broth is a tasty and decidedly healthy first course that should not be missing from our diet.

With a tasty, light, and warm flavor, it warms the palate and stomach on cold evenings of the colder months, but it’s also great served cold on hot summer days.

Lentils are a very valuable element for our well-being thanks to the many properties they provide. They are indeed very rich in fiber, which helps control blood sugar levels.

They are rich in copper, which fights bad cholesterol, magnesium that improves artery elasticity and maintains good blood circulation, iron, vitamin K that contributes to bone health, and they are low in calories.

Therefore, a true source of well-being.

Ideal to serve for dinner.

Lentil broth can be prepared more or less liquid depending on taste.

In this recipe, it’s quite brothy, but if you like it more concentrated, just add more lentils.

Ingredients for Preparing Lentil Broth

  • 1 1/2 water
  • 1 medium potato
  • 1 medium carrot
  • 1/2 white onion
  • 1 stalk celery
  • 8.8 oz dried lentils
  • to taste coarse salt
  • to taste extra virgin olive oil

Steps for Preparing Lentil Broth

To prepare the delicious and healthy lentil broth, start by putting a pot on the stove with water and bring to a boil.

Meanwhile, peel and wash the potato, carrot, onion, and celery under running water.

Cut them into coarse pieces on a cutting board with a knife, and once the water boils, add coarse salt first, then the vegetables.

Let it cook on low heat for about half an hour with the lid on.

Afterward, remove the celery and use a mixer to blend all the vegetables in the broth directly in the pot, but with the heat off, remember.

Then, pour in the lentils and cook on low heat with the lid slightly lifted for another half an hour. You will notice that the broth will take on a strong green color, the color of the lentils.

Once the time has passed, turn off the heat, add a drizzle of extra virgin olive oil, and serve.

If desired, you can add grated cheese and croutons.

Preservation and Notes

Lentil broth can be stored in the fridge in an airtight container for two days. Heat before serving.
