Ingredients
- 7 oz butter
- 1/4 cup sugar
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1/2 cup chestnut flour
- 1/4 cup 75% dark chocolate (chips)
- 1/2 cup almonds
- 3/4 cup boiled chestnuts
- orange zest (grated)
- 1 pinch salt
- 1 tsp baking powder

Steps
Allow the butter to soften at room temperature for about 1 hour or soften it in the microwave for about 30 seconds. Coarsely chop the almonds and cut the chestnuts into pieces, set aside.
In a bowl, add the butter, salt, sugar, and grated orange zest, mix well with a whisk until the mixture is homogeneous and creamy.
Add the eggs and mix. Once the eggs are absorbed, add the sifted flours with the baking powder, finally the chestnuts, almonds, and chocolate chips. Knead.
Form a dough ball and let it rest in the fridge wrapped in plastic wrap for 30 minutes.
Take the dough and form small balls the size of a walnut.
Place them on a baking tray lined with parchment paper and flatten them a bit.
Bake the cookies at 350°F for 15 minutes in a preheated static oven.
Remove from the oven and let cool on a rack.
Tips
They can be stored in a closed container for about 10 days.
Chocolate chips can be replaced with dark chocolate pieces.
Chestnuts can be cooked in a pressure cooker in 25 minutes, or purchased already cooked.
