Spinach Baskets

Spinach baskets are a very tasty and appetizing appetizer.

Ingredients for Preparing Spinach Baskets

  • 1 puff pastry
  • 1.1 lbs fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 3.5 oz Fontina cheese
  • to taste fine salt

Steps for Preparing Spinach Baskets

To prepare the tasty spinach baskets, start by washing and boiling the spinach in plenty of salted water. Then drain, let cool, and squeeze them with your hands to remove all the excess water.

  • In the meantime, roll out the puff pastry with parchment paper, and with the ring mold cut out circles, which you will then place into tart molds, lightly floured, creating zigzag edges as in the photo, simply by crimping them with your hands. Then with a fork, prick the bottom so bubbles don’t form during baking.

  • In a bowl, place the cooked spinach, finely chopped with a knife, diced Fontina cheese, egg, grated Parmesan, and salt. Mix well until you have a homogeneous mixture and

  • generously fill our baskets. Then bake at 356°F for about 30 minutes until golden. The cheese will melt and give the baskets just the right amount of richness to delight our palate.

  • Once baked, serve hot and … enjoy!

Storage and Notes

Spinach baskets can be stored in the refrigerator for two days. Before serving, I recommend reheating in the oven at 320°F.
