Ingredients for Preparing the Rose Baskets

  • 1 puff pastry
  • 1 avocado
  • 6 slices smoked salmon
  • 0.2 oz white onion
  • 1/2 lemon
  • to taste fine salt
  • to taste extra virgin olive oil

Steps for Preparing the Avocado Cream

To prepare the delicious avocado cream, we start by removing the skin and pit from the fruit. Then in a blender we place the avocado pulp, onion, salt, and the juice of half a lemon and blend until creamy and set aside.

  • Meanwhile, roll out the puff pastry and with a ring mold d. 10 cut out circles. Then place the dough circles into tart molds , creating edges as shown in the photo, and pierce the bottom with a fork to prevent bubbles during baking.

  • Bake at 356°F for about 20 minutes. Once the baskets are cooked, remove from the oven, let cool, and then fill generously with avocado cream, garnishing with a slice of salmon rolled into a rose shape. Drizzle a drop of lemon juice over the salmon and a drizzle of extra virgin olive oil. Plate them with a salad and serve… enjoy!
