Ingredients
- 4 potatoes
- 2.5 oz bacon
- 2.8 oz smoked scamorza cheese
- 2.5 oz grated Parmesan cheese
- to taste fine salt
- to taste extra virgin olive oil
- to taste marjoram

Steps for preparing stuffed potatoes
To prepare super tasty stuffed potatoes, start by taking 4 large potatoes and washing them thoroughly, keeping the skin, under running water. If necessary, brush the surface to remove any dirt.
Then place the potatoes in a large pot and cover with plenty of water, put on the stove and cook until they are nice and soft. I recommend the toothpick test. Once cooked, drain and let cool. Then, on a cutting board, cut each potato in half, as in the photo.
and with the help of a spoon, gently scoop out the flesh, being careful not to break them, leaving a border of about 1/8 inch. Place the mashed potatoes in a bowl and mash with a fork.
Meanwhile, grease a baking dish, sprinkle with a pinch of salt and place the potato shells. Then add to the mashed potatoes the diced scamorza and bacon, the grated Parmesan, and a pinch of salt. Mix everything
until you get a homogeneous mixture. Then stuff each potato generously using a spoon, filling to overflow from the shells. Finally, drizzle with a little extra virgin olive oil and bake at 356°F, preheated static oven, for about 20 minutes. For the last 5 minutes, turn on the grill and let it brown. Alternatively, cook in the air fryer for 8-10 minutes at 392°F until golden brown.
After cooking, let cool slightly and finally serve… enjoy your meal!
Storage and notes
Stuffed potatoes can be stored in the fridge for two days, reheat in the oven at 320°F for a few minutes before consuming.
