Radicchio rolls are appetizing and very tasty. One leads to another, and it’s hard to resist them.
Easy to prepare, with a filling of potatoes, sausage, and cheese, all garnished with walnut flakes that add a crunchy note to the dish.
The leaves are used raw as they cook directly in the oven, remaining slightly crunchy on the surface and moist inside.
Radicchio is a good source of vitamin C and is rich in minerals, especially potassium. It is great cooked either raw or cooked.
There are several varieties available on the market, in this recipe I used Chioggia radicchio, the round one, not the elongated one.

Ingredients for preparing radicchio rolls
- 8 leaves radicchio
- 8.8 oz sausage
- 14 oz potatoes
- 3 oz stracchino cheese
- 1 egg
- 1.4 oz grated Parmesan cheese
- to taste fine salt
- to taste extra virgin olive oil
- 5 walnuts

Steps for preparing radicchio rolls
To prepare the delicious radicchio rolls, start by washing the radicchio and gently detaching the leaves one by one
In the meantime, peel and boil the potatoes. Once cooking is complete, let them cool. Then mash them with the potato masher and place them in a bowl along with the crumbled sausage meat, stracchino cheese, salt, grated Parmesan cheese, and the egg.
Mix all the ingredients well with a fork and fill the radicchio leaves. So, place the radicchio leaf wide open on a work surface, place a heaping spoonful of filling in the center (adjust according to the size of the leaf), and then
fold the sides of the leaf inward to wrap and close the filling.
Place them in a previously oiled and salted baking dish, side by side to keep them tightly packed, sprinkle them with a handful of grated Parmesan cheese, with chopped walnuts, and drizzle with a bit of extra virgin olive oil. Finally, bake at 356°F for about 35 minutes, until lightly golden. In the air fryer at 392°F for a maximum of 15 to 20 minutes
Once cooked, let them cool slightly and finally serve… enjoy your meal!
Storage and Notes
Radicchio rolls can be kept in the fridge for two days. Before serving, I recommend heating them in a preheated oven at 320°F for 8-10 minutes
