Savory Bundt Cake with Speck and Potatoes.

Luckily, I always have a roll of puff pastry in the fridge. When the time comes to prepare something delicious at the last minute, it always saves me!

This time I turned it into a savory bundt cake with speck and potatoes, a simple recipe but impressive, perfect to serve as an appetizer, for an aperitif with friends, or as a main course served warm.

The bundt shape makes it scenic and inviting, while the filling of smoked speck, soft potatoes, and creamy eggs and cream wins you over at the first bite.

A clever and quick savory pie that everyone loves and can be adapted to many variations, just change the filling with what we have in the pantry.

Ingredients

  • 1 roll puff pastry
  • 8.82 oz potatoes (boiled)
  • 5.29 oz speck (thinly sliced)
  • 3 eggs
  • 1.76 oz grated Parmesan cheese
  • 5.29 oz cooking cream
  • to taste salt
  • 1 grind black pepper
  • to taste black sesame seeds

Steps

  • Preheat the oven to 350°F.

    In a bowl beat 3 eggs, the grated Parmesan, a pinch of salt and a grind of black pepper. Add the cream, mix and set aside.

  • Unroll a round puff pastry roll and place it in a pan with its parchment paper. Place an overturned small bowl in the center: it will help us mark the inner circle of our bundt cake.

    Distribute the slices of speck over the pastry, creating a ring around the small bowl. Then add the boiled potatoes, cut into cubes.

    Pour the egg mixture over the potatoes and speck, taking care not to touch the center.

    Remove the small bowl and cut the central part of the pastry into segments. Bring each segment outward and seal with the edges to obtain the classic bundt shape. SEE PHOTO

  • Brush the surface with some beaten egg and sprinkle with black sesame seeds.

    Bake in a preheated static oven at 350°F for 30-35 minutes, until golden.
