Invisible Apple Plumcake

The invisible apple plumcake gets its name from the fact that the main ingredient is apples, as there is very little flour in the dough.

The consistency is similar to pudding, soft and almost creamy, it melts in the mouth. It’s a true sweetness for the palate.

Easy and quick to prepare, it’s great at any time of the day, from breakfast to dessert for dinner.
The appearance is also very inviting, and for those who love apples, this is really good.

The mixed aroma of vanilla and apple wafts through the house, making your mouth water even before you’ve seen it.

The apple is rich in pectin, a substance that helps keep blood sugar levels in check, and is also rich in vitamin C and fiber. A real boon for our body, and as they say, “an apple a day keeps the doctor away.”

Ingredients for the preparation of the invisible plumcake

  • 28 oz Golden apples
  • 1/3 cup Type 1 flour
  • 3 eggs
  • 1 pinch salt
  • 2 tbsp brown sugar
  • 1 packet baking powder
  • 3.4 oz milk
  • 1.4 oz seed oil
  • 1 pod vanilla
  • 1/3 cup rice flour
  • 3.4 oz plant-based milk

  • 1 Bowl
  • 1 Electric whisk
  • 1 Mold
  • 1 Kitchen scale
  • 1 Measuring cup
  • Baking paper

Steps

To prepare the delicious invisible apple plumcake, let’s start by peeling the apples and cutting them in half, remove the seeds and

  • slice them thinly as in the photo. Then in a bowl, break the three eggs and add a pinch of salt and the brown sugar

  • so with an electric whisk mix everything until you get a nice frothy mixture. Then, slowly and always keeping the electric whisk on, add first the milk or plant-based milk, then seed oil, type 1 flour or rice flour, vanilla and baking powder and mix well with the electric whisk for a few minutes. Finally, add the sliced apples

  • and mix with a spoon or spatula. Finally, line a baking paper in a plumcake mold and pour the batter and bake at 350°F for about 40 minutes. Please remember to always do the toothpick test before taking it out of the oven, and let the apples brown well.

  • Once the baking is complete, take it out of the oven, let it cool, serve, and … enjoy!

Storage and Notes

The invisible cake keeps for two days in a cool, dry place.
