Zucchini take center stage in many summer recipes. Extremely versatile in the kitchen, we can really get creative with them.
Gratinated, they are truly excellent, crunchy on the surface and soft in the center, and can be served as a side dish to any type of meal, whether meat or fish.
Easy to prepare, they are really within everyone’s reach, and believe me, the result is always appreciated.
In this recipe, the zucchini (I used tromboncino zucchini from Albenga, but regular zucchini available in stores work perfectly) are seasoned with extra virgin olive oil and then breaded with breadcrumbs and Parmesan.
Then everyone can personalize them to their liking, for example by using Pecorino instead of Parmesan, or melting cheese like scamorza or mozzarella, or adding garlic.
Let’s say this version is the most delicate and can be easily paired with other courses.

Ingredients for Preparing Gratinated Zucchini
- 4 zucchini
- 1/4 cup extra virgin olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- to taste salt

Steps for Preparing Gratinated Zucchini
To prepare the delicious gratinated zucchini, start by thoroughly washing them under water and removing the ends.
Then place them on a cutting board (or use amandoline) and with a knife, cut them into fairly thick slices, about a quarter inch thick. Then place them in a bowl and season them with extra virgin olive oil. Mix them well as the oil should act as a binder with the other ingredients. Then add grated Parmesan cheese
and breadcrumbs, salt, and mix well so that they are perfectly coated.
Next, line abaking dish with baking paper and spread the zucchini evenly.
Preheat the oven to 350 degrees Fahrenheit and bake for at least 30 minutes until they become nicely golden.
Once cooked, remove from the oven, let them cool slightly, and finally serve either on their own or accompanied by a good main course and… enjoy!
Storage and Notes
Gratinated zucchini can be stored in the fridge for two days. Before serving, it is advisable to reheat them in the oven for a few minutes.
