Ingredients for Savory Pie alla Parmigiana
- 1 sheet puff pastry (rectangular)
- 1.3 lbs eggplants
- 9 oz emmental cheese
- 7 oz cherry tomatoes
- 1.4 oz grated Parmesan cheese
- to taste extra virgin olive oil
- to taste salt
How to prepare the Puff Pastry Pie with Eggplants
Wash the eggplants. Without peeling them, slice them thinly. Grill the eggplant slices on a hot grill.
Wash the cherry tomatoes and cut them into pieces. I used thinly sliced Emmental cheese, but you can use any soft cheese you prefer, preferably one that melts.
Roll out the rectangular sheet of puff pastry on a baking sheet lined with parchment paper. Prick the bottom with the tines of a fork.
Make a layer of grilled eggplants, slightly overlapping them. Top with slices of cheese and cherry tomatoes. Lightly salt.
Make another layer of eggplants, cheese, and cherry tomatoes. Salt. Sprinkle with grated Parmesan cheese and a drizzle of extra virgin olive oil.
Fold the puff pastry all around to form a border. Bake the Savory Pie with Eggplants in a preheated oven at 374°F in static mode for 25-30 minutes.
