With these sultry days, cold dishes are the only ones that tempt us. And this is one of them. A fresh, rich summer salad full of flavor that also serves as a complete meal.

With these high temperatures, cooking is truly a difficult task. Moreover, appetite dwindles, so indulging in tasty and quick-to-prepare dishes is the only solution.

This salad is a combination of fruit, vegetables, cheese, and prosciutto. A nice portion, and lunch is done.

Ingredients for preparing the summer salad

  • 1/2 melon
  • 1 peach
  • 1 zucchini
  • 5.29 oz stracciatella
  • 2.82 oz prosciutto
  • to taste sesame
  • to taste salt
  • to taste extra virgin olive oil
  • to taste basil

Steps for preparing the summer salad

To prepare the delicious summer salad, we start by cleaning the fruit and vegetables. Then we cut the melon in half and remove the seeds, wash the peach under water, remove the pit leaving the skin on, and cut the ends off the zucchini.

  • Then with a mandoline, we slice the zucchini thinly, salt them and let them rest for at least fifteen minutes to remove excess water. Then we dry them with some paper towel. and set aside. In the meantime, with an ice cream scoop, we create balls with the melon, which should be nice and ripe.

  • Then we slice the peach.

  • Finally, when we have all the ingredients ready, we can plate by placing the zucchini, peaches, melon, prosciutto slices, stracciatella, and finally the sesame on a serving dish. Finish with a drizzle of extra virgin olive oil and a few basil leaves, and finally serve… enjoy!

Storage and notes

This salad can be stored in the fridge for two days and must be well sealed.
