Oven-baked zucchini gratin tasty and flavorful. Even though typically autumn vegetables like pumpkin, cabbage, and mushrooms are starting to appear in my kitchen, I still want to share a recipe with my beloved zucchini. Simple zucchini sliced into rounds and baked in the oven with the addition of egg, milk, and plenty of grated cheese. A simple but very, very good recipe. A simple side dish recipe and special for accompanying all your dishes or even a light and vegetarian main course. Ingredients for Cheese Zucchini

  • 1.1 lbs zucchini
  • 1 egg
  • 0.85 cups milk
  • 2.1 oz grated Parmesan
  • to taste salt

What you need

  • Mandoline

How to prepare Oven-Baked Zucchini with Cheese

  • Wash the zucchini, trim the ends, and with the help of a mandoline or simply with a knife, cut them into thin slices.

  • Oil a small square baking dish of suitable size to arrange the zucchini slices side by side. Arrange the slices forming strips and then filling the empty spaces.

  • In a bowl, combine the egg with a pinch of salt, the milk, and half of the grated Parmesan. Mix with a fork.

  • Pour this mixture over the zucchini to cover them more or less evenly. Season with the remaining Parmesan and a drizzle of extra virgin olive oil.

  • Let the Zucchini cook in the preheated static oven at 374°F for about 30 minutes. I recommend placing the baking dish at the bottom of the oven and moving it to the top in the final minutes of cooking, setting the oven to grill mode to let them gratinate.

If you prefer, you can cook them in an air fryer, perhaps slightly reducing the cooking times

If you have leftover zucchini, store them for 1-2 days in a container in the fridge. Just reheat them for a few minutes in the hot oven or microwave
