Zucchini Skewers

Zucchini skewers are really tasty. They can be served both as an appetizer and as a side dish. Easy to prepare, you can’t stop eating them thanks to the combination of the flavor of zucchini with melted cheese.

Zucchini are the queens of summer, and there are so many recipes you can make. Just as many are the varieties available in the market: light, dark, round.

In this case, I preferred dark zucchini because they are softer and larger than the light ones.

Ingredients for preparing zucchini skewers

  • 4 dark zucchini
  • 8.8 oz mild provolone cheese
  • to taste parsley
  • 2.1 tbsp extra virgin olive oil
  • to taste salt

  • 1 Mandoline slicer
  • 1 Basting brush
  • Paper towel
  • 1 Cutting board

Steps for preparing zucchini skewers

To prepare the delicious zucchini skewers, start by washing them well under water, then remove the ends and peel the surface using a vegetable peeler.

  • Then, with a mandoline slice them into not too thin slices, see photo, and dry them individually with a paper towel.

  • Meanwhile, take a grill pan and heat it well. So, once at temperature, cook our zucchini for a few minutes, turning them once per side.

    While cooking, take a cutting board and a kitchen knife and cut the cheese into cubes. For the size, adjust according to the slice size of the zucchini.

  • After cooking the zucchini, place them on the cutting board and fill each one with a piece of cheese placed as in the photo. Then roll them up and skewer the roll onto a wooden skewer. And so on until completion.

  • Once the skewers are prepared, heat them for 2-3 minutes in the grill pan, turning them once per side, so that the cheese heats up and melts slightly. Meanwhile, in a bowl, place the extra virgin olive oil and parsley, previously chopped, and finally the salt. Then mix with a fork and set aside.

  • When the skewers are ready, brush them with the olive oil and parsley dressing using a kitchen brush. Finally, our skewers are ready to be served… enjoy your meal!

Tips and Notes

Zucchini skewers are also great served cold. You can keep them in the fridge for two days.
