The air-fried orange chicken rolls are spectacular! With a tasty flavor, crispy and therefore irresistible. Rolls are always a winning card at the table and they are also very easy to make!

Ingredients
- 7 oz breadcrumbs
- to taste extra virgin olive oil
- to taste salt
- to taste raisins and pine nuts
- 2 oranges
- 1/4 ball of mozzarella
- 6 slices of chicken breast
- 1 onion
Steps
Heat a dash of oil in a pan and add the breadcrumbs, salt, and raisins and pine nuts
Stir with a spoon until you toast all the breadcrumbs well; this way you will get what we call “muddica atturrata” in Sicily
Put the muddica atturrata in a bowl and add the juice of the oranges (before squeezing, cut 4 slices from the orange and set aside)
Let all the juice be absorbed until the breadcrumbs are moist enough to allow you to form little balls with your hands
Cut the mozzarella into cubes
Lay a slice of chicken breast, create an orange-breadcrumb ball and wrap it including some mozzarella cubes
Continue making all the rolls in the same way
Skewer the first roll on a wooden stick and alternate with an orange slice and an onion slice to form a skewer with 3 rolls
Cook in the air fryer for 20 mins at 356°F
Advice
If you have leftover mozzarella cubes, you can melt them in a non-stick pan and pour them over the cooked skewers
