Puff pastry rolls alla parmigiana delicious and tasty. Eggplants, along with zucchini and peppers, are among the star vegetables of summer. From the classic and irresistible Eggplant Parmigiana to many Eggplant Recipes, each more delicious than the last. The recipe I want to share with you today came about by chance from my desire to prepare a recipe a little different: not the usual Eggplant Rolls and not the usual Savory Tart with Eggplants. So here are Eggplant Rolls with Cherry Tomatoes and Mozzarella wrapped in a light and flaky puff pastry. A simple recipe that guarantees success, and the eggplants are simply grilled… easier than that! And if you want to vary the filling, you can use cooked ham, speck, and other soft, melty cheese. Ingredients for Puff Pastry Rolls with Eggplants
- 1 roll puff pastry (rectangular)
- 14.1 oz eggplants
- 7.1 oz cherry tomatoes
- 7.1 oz scamorza cheese
- to taste salt
- 2 tbsp milk (for brushing)
How to prepare the Eggplant Puff Pastry Rolls
Wash the eggplants. Remove the stem and, without peeling them, cut them into thin slices lengthwise. You will need about 20 large eggplant slices.
Grill the eggplant slices on a hot grill. Wash the cherry tomatoes and slice them thinly.
Place 2 overlapping grilled eggplant slices on the work surface. Stuff with 3 slices of cherry tomatoes and a slice of scamorza cheese.
Roll up one slice of eggplant to form an Eggplant Roll. Then wrap it with the other grilled eggplant slice. Prepare them all in the same way. Unroll the rectangular puff pastry on the work surface and cut it into 10 strips along the shorter side.
Wrap a strip of puff pastry around the Eggplant Roll, slightly overlapping it. Prepare them all in the same way.
Place the puff pastry rolls alla parmigiana slightly apart on a tray lined with parchment paper. Brush them with milk.
Bake the Puff Pastry Rolls with Eggplants in a preheated oven at 375°F in static mode for 22-24 minutes.
