The recipe I want to tell you about today is for delicious and flavorful Baked Zucchini Rolls with a filling of cooked ham and melted cheese. I breaded the Zucchini Rolls with breadcrumbs and grated parmesan and simply baked them in the oven, without pre-cooking the zucchini which I sliced very thinly lengthwise with the help of a potato peeler. If you prefer, you can also use an air fryer for cooking, and if you want to indulge, you can also fry them. You can vary the filling according to your taste and creativity. Ingredients for Baked Zucchini Rolls
- 18 oz zucchini
- 3 oz cooked ham
- 7 oz scamorza (in slices)
- 1 egg
- 1/2 cup breadcrumbs
- 1/3 cup grated parmesan
- 1 1/3 tbsp extra virgin olive oil
- to taste salt
How to Prepare Zucchini Rolls
Wash the zucchinis, trim the ends, and slice them very thinly lengthwise using a potato peeler.
Place the zucchinis on a work surface and add a slice of soft melting cheese and a small slice of cooked ham on each piece.
Gently roll the zucchinis to form small rolls.
In a bowl, mix the breadcrumbs with the grated parmesan. In a small bowl, beat the egg with a pinch of salt.
Dip the Zucchini Rolls first in the egg and then in the breadcrumbs, ensuring they are well-coated on all sides.
Place the Zucchini Rolls in an oiled baking dish next to each other. Drizzle some oil on top and let them bake in a preheated static oven at 375°F for 20 minutes.

Loredana’s Tips
If there’s any leftover zucchini, store them in the fridge in a container for 2 days or you can also freeze them.
You can change the filling by replacing the cooked ham with speck or mortadella. For a vegetarian version, just add cheese.
You can replace the scamorza with other soft cheese like caciotta, emmental, asiago, or simply slices if you prefer.
