OAT AND BERRY BARS the light and delicious dessert

Crunchy, light, and delicious oat and berry bars. Lately, I’ve become obsessed with oat flour and oat flakes. In truth, due to my thyroiditis, I had to lose some extra pounds and started preparing Porridge for breakfast. And it was a delightful discovery. Oats are a cereal rich in fiber, vitamins, and minerals, with plenty of vitamin B1, iron, and phosphorus. Oats are also rich in antioxidants that help protect the cardiovascular system from arteriosclerosis and beta-glucan that helps control blood glucose levels. Today I want to tell you how I prepared a Sweet with oat flakes, almonds, and berries. A perfect sweet for breakfast, as a snack, or at any time of the day for a light and special sweet break. Few simple ingredients and lots of sweet berries. I enriched the dough with cinnamon which I love so much, and I’ll let you imagine the delicious and irresistible aroma. Ingredients for the Oat Flake Bars

  • 2 cups oat flakes
  • 1 egg
  • 1/3 cup brown sugar
  • 1/4 cup vegetable oil
  • 3/4 cup almonds
  • 3 cups berries (fresh or frozen)
  • 2/3 cup oat flour
  • 1/2 cup plant-based milk (oat or soy)
  • 1/2 teaspoon ground cinnamon

How to Prepare the Cake with Oats and Berries

  • Wash the berries and let them drain on paper towels. You can use the berries you prefer, even frozen ones are fine, if so, let them thaw well.

  • Coarsely blend the oat flakes with the almonds in a mixer. Pour the egg and the plant-based milk into a bowl. Also add the vegetable oil and brown sugar, and simply mix with a fork.

  • Add the almonds and oat flakes, the cinnamon, and the oat flour. Mix well. You should get a soft but not compact dough. Line a rectangular baking dish, mine measures 8 x 11 inches, with parchment paper.

  • Pour 2/3 of the dough into it, pressing it down with slightly wet hands to make a thin, compact base. Pour the berries on top and sprinkle with 2-3 tablespoons of brown sugar.

  • Coarsely crumble the remaining dough. It doesn’t need to be uniform. Bake the Crumble with berries and oats in a preheated static oven at 350°F for about 30 minutes. Let it cool, sprinkle with powdered sugar, and cut into squares or rectangles of various sizes.

The Cake with oat flakes can be stored in a container for 2-3 days. You can also freeze it.

If you prefer not to use the egg in the preparation, you can replace it with an additional 1/4 cup of plant-based milk
