Ingredients for Baked Gratin Eggplants
- 2 eggplants (medium)
- 3 1/2 oz bread crumbs
- 6 1/3 oz cherry tomatoes
- 1 3/4 oz grated Parmesan
- 2 tbsp extra virgin olive oil
- 1 sprig basil
- 1 clove garlic
- to taste salt
How to Prepare Breaded Baked Eggplants
Wash the eggplants. Remove the stem and the base and cut them into slices about 1/8 to 1/4 inch thick. Place the eggplant slices on a baking sheet lined with parchment paper. Lightly salt and oil them. Let the eggplants cook in a preheated static oven at 375°F for 16-18 minutes.
While the eggplants are cooking, prepare the coating. You will need a mixer where you will insert the bread crumbs, a pinch of salt, some fresh basil leaves, the garlic clove, the grated Parmesan, and the washed and chopped cherry tomatoes. Add also 2 tablespoons of extra virgin olive oil and blend.
Take out the eggplant slices from the oven and spread 2 tablespoons of the coating on each slice over the entire surface. A drizzle of extra virgin olive oil and let the Baked Eggplants with Cherry Tomatoes cook in the oven at 375°F in static mode for 10-12 minutes. At the end of cooking, garnish with some fresh basil leaves.

If there are leftover eggplants, store them in a container in the fridge. You just need to reheat them for a few minutes in a hot oven or microwave
You can choose to grill the eggplant slices before covering them with the coating for baking
If you have a large air fryer, you can also choose this type of cooking by reducing the cooking times
If you prefer, you can omit the garlic or add some anchovy fillets in oil. You can replace the basil with parsley
