Savory Tart with White Asparagus

The savory tart with white asparagus is made with a type of asparagus that is available at this time of year 🙂

I usually use the green and purple ones, but I use the white ones less because they are harder to find 😉

Yesterday, I went to the greengrocer and as soon as I saw them, I picked them up immediately.

The first time, I made a tasty risotto and now I wanted to try them in a savory tart.

It’s a light and flavorful savory tart: I added some mild scamorza cheese and Greek yogurt to create a creamy mixture 😀

If you don’t have Greek yogurt, you can use regular yogurt or ricotta.

This morning, I prepared it for today’s lunch and served it as a side dish.

The cooking time for white asparagus varies depending on their size (it ranges from 20 – 30 minutes), so you’ll need to adjust accordingly.

Ingredients for the savory tart with white asparagus

  • 2 cups all-purpose flour
  • 1/2 cup water
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt
  • 1 bunch white asparagus
  • 3/4 cup 0% fat Greek yogurt
  • 3 oz scamorza cheese
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt

Steps for the savory tart with white asparagus

  • Clean the white asparagus by cutting off the tougher, woody end, and use a peeler to remove some of the tougher parts from the sides of the asparagus.

    Cut them into pieces, place them in a bowl, add the oil, salt, diced scamorza, and Greek yogurt. Mix well with a spoon.

    On the table, pour the flour, water, oil, and salt. Work the mixture with your hands to form a ball.

    Roll it out into the pan lined with parchment paper, prick the bottom with a fork, pour in the creamy mixture, leveling it well with a spoon.

  • Preheat the oven to 356°F in static mode and bake the savory tart with white asparagus for about an hour or until it colors on the surface.
