Eggplant Mini Pizzas

For those like me who love vegetables, eggplant mini pizzas are a true delight! Crunchy and flavorful, they have nothing to envy the originals. Much quicker to prepare and a great idea to impress our guests!

I love this season because my garden gives me plenty of vegetables, and I have so much fun in the kitchen creating new recipes.

Since I was a child, I’ve loved picking vegetables, and it’s a passion I’ve cultivated even as an adult. I tend to my plants, not just vegetables, as if they were my own creations, and they give me great satisfaction. During the time I lived in an apartment, I missed cultivating this passion very much.

In my new house, where I have both a garden and an orchard, I planted almost all the plants myself, with a pitchfork and a trowel, building my muscles, and now I admire them lush and beautiful. It’s a great satisfaction indeed.

Ingredients for preparing eggplant mini pizzas

  • 2 eggplants
  • 250 g tomato sauce
  • 2 mozzarella
  • 1/4 cup extra virgin olive oil
  • 1 cup breadcrumbs
  • to taste salt
  • to taste dried oregano

  • 1 Baking Tray
  • Baking paper
  • 1 Mandoline

Steps for preparing eggplant mini pizzas

To prepare the tasty eggplant mini pizzas, start by trimming the ends and washing them thoroughly under running water.

  • Then with a mandoline slice the eggplants into round slices about 1/8 inch thick.

  • Next, in a flat plate, pour the breadcrumbs while in a deep plate, add the extra virgin olive oil and salt and emulsify. Then bread the eggplant slices one at a time, first in the oil, just a quick dip on both sides, and then in the breadcrumbs.

  • Meanwhile, line a baking tray with parchment paper and place the breaded eggplants. Then, season the tomato sauce with salt and using a spoon, top the individual slices, leaving the edges free.

  • Finally, add the crumbled mozzarella and sprinkle with dried oregano.

    Preheat the oven to 356°F and, once at temperature, bake our tray of mini pizzas and cook for about 20 minutes. Once time is up, remove from the oven and serve warm… enjoy!!

Notes and Tips

You can further enrich the eggplant mini pizzas with products of your choice, like cured meats, anchovies, and so on, just like real pizzas.
