Baked chicken and potatoes is the classic recipe that everyone prepares and that is loved by both children and adults. It is a delicious and tasty main course that can be made either in the oven or in a pan.
It’s a recipe that doesn’t require much attention, but if you’re in a hurry, you can pre-cook the chicken and potatoes in a pot and then bake them to make them more golden and crispy.
When you have little time but still crave a good dish, this is the right and quick recipe: just prepare all the ingredients in the pot for pre-cooking, then transfer them to the oven, stir occasionally, and they cook on their own. Here is the result of the quick baked chicken and potatoes.
It can be prepared simply with potatoes or add cherry tomatoes, onion, and basil for a more summery and flavorful version.

- 3 chicken thighs
- 3 potatoes
- 1 onion
- 4 garlic cloves
- 1 sprig rosemary

Steps
Peel the potatoes and cut them into wedges.
If you want to facilitate cooking in the oven and also remove some extra fat, boil the chicken thighs in a little water and salt for at least 5 minutes, along with the potatoes.Once this step is done, you can skip it if you prefer, place the thighs and other pieces of chicken, potatoes, peeled and sliced onion, chopped garlic cloves, fresh or dried herbs, a pinch of salt, and a drizzle of oil on a baking tray lined with parchment paper.
For a more summery and flavorful version, add cherry tomatoes and basil.For this recipe, you can use both drumsticks and chicken thighs.
Now cook everything in a hot oven for more than half an hour if you have pre-cooked, otherwise cook for about an hour, stirring occasionally to ensure even cooking on all sides.
Once the chicken and potatoes are adequately golden, remove and serve hot.
