- 14 oz chicken breast (sliced not too thin)
- 1 ½ cups cherry tomatoes
- 7 oz Tropea red onion (weighed after being cleaned)
- 4 tbsps extra virgin olive oil

Preparation of Mediterranean Chicken Strips
Wash and dry the cherry tomatoes, clean the onion from waste parts, cut the tomatoes in half and chop the onion, then place them in a bowl.
Season onion and tomatoes with oil (3 tablespoons, leave 1 for the pan), salt, pepper, and oregano, mix well with two spoons, cover with cling film and let it rest in the fridge for at least an hour or until used (you can leave it in the fridge from morning till evening to have the dressing always ready!).
Once the dressing has rested, place the remaining tablespoon of oil in the pan, cut the chicken breast into strips and place them into the pan with hot oil over high heat, stirring continuously for about 5 minutes.
At this point, the chicken strips will be halfway cooked, now add the dressing, stir and lower the heat to medium, continue cooking for another 15/20 minutes, stirring constantly, at the end of cooking you will have well-cooked, tender chicken.
