Oven-Baked Lamb, Classic Recipe

Oven-baked lamb, a classic recipe of Italian countryside tradition, a dish that symbolizes tradition on Easter tables but is also eaten all year round. Personally, I love lamb in every way it is cooked, for example, also try fried lamb! Few and simple ingredients for a mouthwatering main dish! I recommend a side dish that pairs perfectly with lamb and you can read the recipe here: grilled fennel.

  • 6 lamb chops (total weight of 450 g, cut medium thickness)
  • 3 cloves red garlic
  • 3 sprigs rosemary
  • 2 tablespoons extra virgin olive oil
  • 1 to taste salt
  • 1 to taste mixed peppercorns (freshly ground)

Useful Tools

  • Baking Pan

Recipe Preparation

  • Salt the lamb chops on both sides and place them in a non-stick baking pan.

  • Add freshly ground pepper, rosemary, and cleaned, coarsely chopped garlic on top.

  • Drizzle with the oil specified in the recipe and bake in a preheated oven at 482°F, cook for 20 minutes, but always check the cooking as it varies according to your taste and the thickness of the chops.

  • Serve hot, accompanied by your favorite side dish, classic potatoes or a nice salad, I, for instance, love to serve it with a side of lamb’s lettuce (simply dressed with a pinch of salt and a drizzle of oil) as shown in the photo here!

TIPS

If you want to keep the lamb warm and tender while waiting to serve it, you can store it in the oven on low and covered with parchment paper, you can also serve it accompanied by a citronette made with oil and lemon and/or orange, I personally don’t like to add it and serve it separately, you can also accompany it with simple lemon slices.
