Ingredients for Fried Zucchini
- 1.1 lbs zucchini
- 6 tbsps flour
- 2 tbsps remilled durum wheat semolina
- 1 cup peanut oil (for frying)
- to taste salt
How to prepare Roman-style Fried Zucchini
Wash the zucchini, trim the ends. Cut them first into 3 parts, then into slices about 1/4 inch (0.2 inches) thick, and then into sticks. Try to make them more or less the same size to ensure even cooking.
Transfer the zucchini sticks into a bowl. Add the flour and remilled semolina. Mix with 2 tablespoons to coat the zucchini well all around. Transfer them to a colander to remove excess flour.
Heat abundant seed oil in a small, deep pan. Fry a few zucchini at a time until golden all over. Drain them with a slotted spoon and let them dry on kitchen paper. Serve with a sprinkle of salt.
