Notes and Variants

If you like a softer glaze, you can add 2 tbsps of cream or 1 1/2 tbsps of butter to the white chocolate (in this case, the glaze will never harden but will remain creamy and soft). You can add 3 tbsps of rum to the batter if you like liquor. You can moisten the cake with cherry syrup.

If you don’t like candied cherries, you can substitute them with fresh fruit like chopped apricots, peaches, plums, grapes, melons, bananas, or apples, depending on the season.

If you don’t want to add fruit, you can garnish with whipped cream dollops and even add more under each cherry.

You can tint the white chocolate pink using cherry syrup; it will make an even more spectacular cake!
