Carasau Focaccia with Cheese

It is going viral on the web what I called carasau focaccia with cheese but many other bloggers have instead defined as “fake focaccia”. It is incredibly delicious and unbelievably simple. Let’s not talk about how fast its preparation is. When I saw it on social media, the first thought that came to me was: “why didn’t I think of it before?” So, I strongly recommend you consider this recipe because I’m absolutely sure you will make it over and over again. It is perfect served as an appetizer, fantastic as a rustic dinner paired with a simple salad, and fabulous as a quick snack.

Ingredients for Carasau Focaccia with Cheese

  • 3.5 oz carasau bread
  • 6.35 oz crescenza cheese
  • 0.7 oz Grana Padano cheese, grated (or Parmesan)
  • extra virgin olive oil
  • salt
  • black pepper

Preparation of Carasau Focaccia with Cheese

  • Line the bottom of a baking tray with parchment paper or grease it with a little oil. 

  • Wet the carasau bread sheets and arrange them in the baking tray to completely cover the surface. 

  • Season with salt and pepper to taste, then drizzle with a little oil. 

  • Then add the crescenza cheese, distributing it here and there in dollops. 

  • At this point, cover everything with another layer of carasau bread sheets, always previously wetted in water. 

  • Finally, season with salt and pepper again, sprinkle with the grated cheese, and finish with a drizzle of oil. 

  • Bake the Carasau Focaccia in a preheated static oven at 356°F for 30 minutes. Take it out of the oven and enjoy it hot. Enjoy! Paola
