I confess that I often prefer them to cakes, perhaps because being so small makes me feel less guilty about eating one immediately, or better yet, two! The recipe I want to share with you today is my simple and perfect recipe for preparing super soft and very fluffy berry muffins. A simple and quick batter to prepare with the addition of a jar of yogurt, plain or berry-flavored, for special softness. For the berries you can use a tray of mixed berries or just one or two types, or if you prefer, you can also choose to use frozen berries. I also recommend not missing my double chocolate muffins. These muffins are perfect for breakfast, as a snack, or simply when you crave a special treat. They are soft, fluffy, and moist inside, and so good that they’ll win you over with the first bite. Let’s head into the kitchen and prepare them together.

Ingredients for Soft Berry Muffins
- 2 eggs
- 1/2 cup sugar
- 1/4 cup butter (melted)
- 1 plain yogurt (or berry-flavored)
- 1 1/4 cups flour
- 1/2 packet baking powder (8 grams)
- 1 1/2 cups berries (fresh or frozen)
- to taste powdered sugar (for decoration)
What You Need to Make the Muffins
- Muffin Tray
- Cupcake Liners
- Mixer
How to Make Berry Muffins
Wash the berries and let them drain on sheets of kitchen paper. Whisk the whole eggs with the sugar using an electric mixer for 4-5 minutes, until the mixture is light and foamy.
Add the melted butter and a jar of plain or berry yogurt. Mix. Continue the preparation by adding the sifted flour with the baking powder and mix well.
Finally, add the berries and simply mix with a spatula to incorporate them into the batter. Place the paper liners in the prepared muffin tray with holes. Fill the liners 2/3 full with the batter.
Bake the yogurt and berry muffins in the preheated static oven at 350°F for 22-24 minutes. Always do the toothpick test to check for internal cooking. Allow them to cool and decorate as desired with powdered sugar.

If you prefer, you can replace the butter with 1/4 cup of vegetable oil.
The muffins stay soft and fluffy in a container for 2-3 days. You can also freeze them.
You can also use silicone muffin liners placed on a baking tray or directly on the oven rack for baking.
