Ingredients for Rustic Pie with Zucchini

  • 1 roll puff pastry (rectangular)
  • 1.1 lbs zucchini
  • 4.2 oz cooked ham
  • 7.1 oz scamorza (sliced)
  • 1/3 cup grated Parmesan
  • 3 tbsps milk (for brushing)
  • 2 tbsps sesame seeds (for decorating)

How to prepare Savory Pie with Zucchini and Ham

  • Wash the zucchinis. Trim the ends and, using a large-hole grater, reduce them to thin strips inside a cotton cloth placed in a bowl. Close the cloth and squeeze to remove the zucchini’s water.

  • Roll out a rectangular puff pastry sheet on the work surface. Cover half of the puff pastry with slightly overlapping slices of cooked ham.

  • Spread the grated zucchinis over the ham in a more or less uniform layer. Sprinkle the zucchinis with the grated Parmesan. The Parmesan’s saltiness will prevent the need to add extra salt.

  • Now cover with the sliced cheese. Using the parchment paper, cover the filled half with the other half of the puff pastry. Using a fork’s tines, seal all around. Transfer the Zucchini Pie to a baking tray.

  • Brush the savory pie with milk and decorate with sesame seeds. Let the rustic pie with zucchinis cook in the preheated oven at 375°F in static mode for about 30 minutes.

Loredana’s Tips

If there’s leftover savory pie store it in a container in the fridge for 2 days or you can freeze it. You just need to reheat it for a few minutes in the oven or microwave

If you prefer, you can replace the cooked ham with speck and the scamorza with another soft and melting cheese like caciotta, asiago or smoked scamorza
