THE SOFTEST AND MOST DELICIOUS APPLE MUFFINS

Super soft and tender apple and almond muffins. Apple desserts always have a unique and unmistakable aroma for me. It only takes a moment to bring back so many sweet memories, like the smell of the Apple cake that my grandmother used to make and, as per tradition, she would let it cool on the windowsill. And we, the little ones of the house, would be so enchanted and waiting! A magical sprinkle of white powdered sugar and finally each of us could have our own slice of cake to enjoy. And as soon as I take out an Apple dessert from my oven, the aroma returns as if by magic, the joy of waiting, and I feel like a child again! What I want to share with you today is the recipe to make the fluffiest and softest Apple Muffins. A delightful and simple treat that wins at the first bite. I’ve enriched my Apple cakes with almond flakes and a delightful hint of cinnamon that goes perfectly with apples. They are really simple and quick to prepare. For the preparation, I also used spelt flour for a delicious rustic flavor that conquers at the first bite! So let’s run into the kitchen and prepare some delicious Apple Muffins together.

Ingredients for Apple Cakes

  • 2 egg
  • 3.17 oz sugar
  • 1 jar plain yogurt
  • 2.82 tbsp butter (melted)
  • 3.53 oz all-purpose flour
  • 2.47 oz spelt flour
  • 2 apples
  • 1.41 oz sliced almonds
  • 1/2 tsp ground cinnamon
  • Half packet baking powder (8 grams)
  • to taste powdered sugar (for decoration)

What You Need to Make Apple Muffins

  • Muffin Tins
  • Hand Mixer

How to Make Apple and Yogurt Muffins

  • Peel the apples, clean them, and cut one into cubes and the other into thin slices. Beat the 2 eggs with the sugar using an electric mixer for 4-5 minutes until you have a light and fluffy mixture.

  • Add the melted butter and a jar of plain yogurt. Mix.

  • Continue making the Muffins by adding the sifted all-purpose flour, spelt flour, baking powder, and ground cinnamon. Mix.

  • Add the cubed apple and mix with a spatula to incorporate it into the batter. Place the silicone muffin cups slightly spaced apart on a baking tray.

  • Fill the muffin cups with 2 tablespoons of batter, filling them 2/3 full. Place 3-4 apple slices on top of each, lightly letting them sink into the batter. Finish with sliced almonds.

  • Bake the Soft Apple Muffins in a preheated oven at 338°F in static mode for 18-20 minutes. Always do the “toothpick test” to check the internal cooking. Let them cool. Decorate as desired with some powdered sugar.

If you prefer, you can use paper muffin cups and the appropriate muffin tin with holes
