Pizza Scima

Pizza Scima or Scema, is a typical Abruzzese recipe that is very easy and quick to prepare.

The advantage of this pizza is that it is made with only three ingredients, that is with flour, white wine, and extra virgin olive oil.

It doesn’t require yeast; indeed, it has a crispy and crumbly texture. The white wine gives it the right kick for a tasty flavor and the coarse salt on the surface completes it. While baking, it emits an incredible aroma that delights the whole house.

It’s an ancient recipe that was even cooked on the wood stove, while now it’s baked in the classic home electric oven. Ideal as a bread substitute. In fact, I prepare it when I don’t have time to wait for the bread to rise, or when I suddenly remember that I don’t have it at home.

Great to serve accompanied with fresh tomato, like bruschetta, or with cold cuts and cheese.

Ingredients for making Pizza Scima

  • 3 1/3 cups type 1 flour
  • 3/4 cup white wine
  • 7 tbsp extra virgin olive oil
  • 1/2 teaspoon salt
  • to taste coarse salt

Tools for making Pizza Scima

  • 1 Bowl
  • 1 Wooden spoon
  • 1 Kneading board
  • 1 Baking tray
  • 1 Knife
  • 1 Brush

Steps

To prepare Pizza Scima, let’s start by getting a bowl.

  • Then pour in 350 grams (about 2 3/4 cups) of flour, keep the remaining 50 grams (1/2 cup) for later, then the white wine, then the extra virgin olive oil,

  • and roughly mix with a wooden spoon. Then pour the dough onto a kneading board and add the remaining 50 grams (1/2 cup) of flour and begin kneading with your hands for a few minutes.

  • Until you get a homogeneous dough. This color is due to type 1 flour, which is less processed than 00, thus retaining the grain’s nutrients.

    Subsequently, flour a round baking tray of 26 cm (10 inches) in diameter and roll out the dough evenly.

  • Finally, with a knife, cut the surface into diamonds, taking care not to cut through the dough. Then brush it all with a drizzle of extra virgin olive oil, sprinkle with coarse salt, and bake at 428°F (220°C) for 8 minutes and then at 356°F (180°C) for another 10 minutes.

Once baking is completed, let it cool and finally serve… enjoy your meal!

Storage and Notes

Pizza Scima can be stored for two to three days in a cool, dry place. It is better if wrapped in a paper bag.
