Ingredients for Green Beans in Mimosa Sauce
- 1.1 lbs green beans
- 2 egg yolks (hard-boiled)
- Half lemon
- 1 bunch parsley
- Half clove garlic
- A few berries pink peppercorns
- extra virgin olive oil
- salt

Preparation of Green Beans in Mimosa Sauce
Trim the green beans, wash them, and boil them in salted water.
Drain them al dente and transfer them to a bowl full of cold water. This will stop the cooking process and keep their color bright.
Wash the parsley, dry it, and finely chop it along with the garlic clove.
Transfer the chopped mixture to a small bowl, add the lemon zest, one and a half hard-boiled egg yolks crumbled, a generous pinch of salt, and a few roughly crushed pink peppercorns. Also add the juice of half a lemon and a few tablespoons of olive oil. Mix everything well until you obtain a smooth sauce.
At this point, drain the green beans from the cold water and pat them dry with a clean dish towel or paper towels. Put them in a large bowl and dress them with the mimosa sauce, mixing gently. Adjust the salt, if necessary.
Plate the green beans and sprinkle them with the remaining half of the egg yolk, passing it through the meshes of a strainer to create the mimosa effect.
