Green Beans in Mimosa Sauce

These green beans in mimosa sauce are a very easy side dish to prepare that will allow you to make a good impression without much effort. And I haven’t even talked about their deliciousness yet! I found them really exquisite. They are very appetizing and unique in their flavor. It’s hard to stop at just one forkful. Ingredients for Green Beans in Mimosa Sauce

  • 1.1 lbs green beans
  • 2 egg yolks (hard-boiled)
  • Half lemon
  • 1 bunch parsley
  • Half clove garlic
  • A few berries pink peppercorns
  • extra virgin olive oil
  • salt

Preparation of Green Beans in Mimosa Sauce

  • Trim the green beans, wash them, and boil them in salted water.

  • Drain them al dente and transfer them to a bowl full of cold water. This will stop the cooking process and keep their color bright.

  • Wash the parsley, dry it, and finely chop it along with the garlic clove.

  • Transfer the chopped mixture to a small bowl, add the lemon zest, one and a half hard-boiled egg yolks crumbled, a generous pinch of salt, and a few roughly crushed pink peppercorns. Also add the juice of half a lemon and a few tablespoons of olive oil. Mix everything well until you obtain a smooth sauce.

  • At this point, drain the green beans from the cold water and pat them dry with a clean dish towel or paper towels. Put them in a large bowl and dress them with the mimosa sauce, mixing gently. Adjust the salt, if necessary.

  • Plate the green beans and sprinkle them with the remaining half of the egg yolk, passing it through the meshes of a strainer to create the mimosa effect.
