These jam muffins are really too good. I’ve called them that even though I actually filled them with strawberry jam. Of course, you can use any other flavor of jam or orange or mandarin marmalade. That’s why, in the end, I chose a more classic and generic name. They are extremely soft, contain no butter, and are very easy to make. The process is the usual: dry ingredients into the liquids and into the muffin cups. Great for breakfast and snack. I made them specifically for my kids’ breakfast. They always get up at the last minute and take a container with a slice of cake to the office. This time, instead of cake, they’ll find muffins: unless they make them all disappear before tomorrow.

Ingredients for 12 Jam Muffins
- 1 1/4 cups all-purpose flour
- 1/3 cup cornstarch
- 1/2 cup sugar
- 1/2 cup corn oil
- 2 eggs (medium)
- 1/2 cup plain yogurt
- 1 pinch salt
- 2 tsp baking powder
- 1/2 cup strawberry jam (or any flavor you like)
- powdered sugar for decoration

- Electric mixers
- 1 Spatula
- 1 Sifter fine mesh
- Muffin pan 12-cup
- 12 Cupcake liners
Preparation of Jam Muffins
Put rice at the bottom of the muffin molds before inserting the paper liners. This trick allows us to have clean liners after baking.
In a bowl, mix the dry ingredients: flour, cornstarch, baking powder, and a pinch of salt. Set aside.
In another bowl, put the sugar with the eggs and beat them with the electric mixers until you get a light and frothy mixture.
Then add the oil and yogurt and mix again with the mixers.
At this point, gradually sift the dry ingredients through a fine mesh sifter and incorporate them with a spatula until you get a creamy consistency.
Pour the batter into the liners, filling them halfway.
Now put a teaspoon of jam in the center and cover with more batter.
Finally, decorate each muffin with a few drops of jam placed right on top.
Bake the jam muffins in a preheated static oven at 350°F for 20/25 minutes. Take them out of the oven and let them cool slightly before enjoying them. If desired, they can be dusted with powdered sugar. Enjoy! Paola
