Strawberry and cream cake soft and delicious. The recipe I want to share with you today is that of a wonderful Cake with strawberries. This cake was specifically requested by Chiara, my son’s girlfriend, and I couldn’t resist making it for her right away. So here is a very soft sponge cake filled with lots of whipped cream and sweet strawberries. A simple yet special dessert, perfect for an important occasion. We celebrated my little one’s birthday early at home, as he finally spent a few days with us, although he didn’t blow out the candles for good luck! The sponge cake base I made with my perfect recipe without adding baking powder, and you can easily prepare it in advance, even 2 days before. I moistened the sponge cake layers with a light syrup made from limoncello and water, but if you prefer, you can use rum or, if you don’t want to add liquor, simply moisten with milk or not at all since it remains soft even without it. Ingredients for the Strawberry and Cream Cake
- 4 eggs (very fresh)
- 120 g sugar
- 120 g flour
- 1.7 cups heavy whipping cream
- 0.8 cups powdered sugar
- 1.3 lbs strawberries
- 1 sprig mint (for garnish)
- 1 small glass limoncello
- 0.5 cups water
What you need to prepare the Sponge Cake with Cream and Strawberries

How to make the Strawberry and Cream Cake
Leave the eggs at room temperature for at least an hour before making this dessert. Beat the whole eggs with the sugar using an electric mixer for at least 15-20 minutes, until you have a light, dense, and foamy mixture. This is the secret to its perfect outcome. Add the sifted flour a little at a time and gently fold it into the mixture.
Grease and flour, shaking off excess flour, a 9-inch diameter pan and pour the mixture into it. Bake in a preheated static oven at 350°F for about 30-35 minutes. The Sponge Cake soft is ready when it is puffed, golden, and detaches from the sides. Let it cool before turning it out onto a serving plate.
Cut the sponge cake into 3 or 4 discs. Mix the limoncello with the water in a bowl. Wash the strawberries, clean them, and cut them into pieces. Set aside the smaller strawberries to decorate the cake.
Place a sponge cake disc on a serving plate. Brush it with the limoncello syrup. Whip the heavy cream with the addition of powdered sugar. Transfer the whipped cream to a pastry bag with a large star tip.
Fill the sponge cake base with small dollops of whipped cream. Distribute lots of strawberry pieces on top. Cover with another sponge cake disc and proceed in the same way. Finish with the last sponge cake disc.
Finish by spreading the surface and sides of the cake with a spatula. Place smaller strawberries cut in half on top and decorate with dollops and stripes of whipped cream, letting your imagination guide you. Finish with a few fresh mint leaves. Keep the dessert in the fridge.

You can prepare the Sponge Cake in advance and store it for 1-2 days in a container or wrapped in plastic wrap
I do not add baking powder to the batter, but if you want to ensure the result and are not very experienced in baking, you can add half a packet of baking powder along with the flour
If you use pre-sweetened vegetable cream, omit the additional powdered sugar
