CRISPY AND DELICIOUS BAKED CAULIFLOWER CUTLETS

Crispy and delicious Baked Cauliflower Cutlets. The recipe I want to tell you about today features a delicious cauliflower that I turned into crispy cutlets and baked in the oven. They are so good that they convince everyone to eat this delicious vegetable. Cauliflower is low in calories, about 25 Kcal every 100 grams; it is rich in minerals, fiber, calcium, and vitamin C. It’s full of antioxidants, anti-inflammatories, and helps against hypertension thanks to amino acids. So many reasons to indulge in abundance and prepare numerous recipes. For the breading, I added unsweetened corn flakes to the breadcrumbs for extra crunchiness. The Baked Cauliflower Cutlets I prepared today were simply baked in the oven, but you can also cook them in an air fryer, fry them, or cook them in a pan with a little olive oil. Ingredients for Baked Cauliflower

  • 1.1 lbs cauliflower
  • 2 cups potatoes
  • 1.8 oz grated Grana Padano cheese
  • 1 cup breadcrumbs
  • as needed extra virgin olive oil
  • 1 sprig parsley
  • 1.4 oz corn flakes (unsweetened)
  • as needed salt
  • 1 pinch pepper

How to Prepare Cauliflower Patties

  • Clean the cauliflower by removing the outer leaves and dividing it into florets. Wash it and let it drain. Peel the potatoes and wash them. Cook both the potatoes and cauliflower in boiling water. For the cauliflower, it takes about 12-14 minutes. For the potatoes, it takes 25-30 minutes. Check the cooking of both by piercing them with the tines of a fork.

  • Drain the cauliflower and potatoes. Cut the potatoes into cubes. Place the potatoes and boiled vegetables in a bowl. Using a potato masher, mash them both into a puree. It’s okay if there are some larger pieces left.

  • Add a pinch of salt and a pinch of pepper. Also add the grated cheese, chopped parsley, and 3-4 tablespoons of breadcrumbs. Mix well using a fork. Mix the remaining breadcrumbs with the coarsely crushed corn flakes in a bowl.

  • Form the Cutlets. Take a portion of the mixture and press it between your hands to form the Cauliflower Croquettes. Coat them well with the breadcrumbs as you prepare them.

  • Arrange them next to each other on a baking tray lined with parchment paper. Oil them and let them bake in a preheated static oven at 374°F for 18-20 minutes.
    If you prefer to cook them in an air fryer, proceed the same way and let them cook in the air fryer at 365°F for 16-18 minutes.

Loredana’s Tips

If you have leftover Cauliflower Cutlets, you can store them in a container in the fridge. You just need to reheat them for a few minutes in a hot oven or microwave to make them crispy as fresh again.

If you prefer, you can fry them in hot seed oil and then let them drain on paper towels.
