Strawberry and yogurt muffins, the softest and best you’ve ever tasted. How delicious are strawberries! I confess that we eat a lot of them at my house during this period, and I also take the opportunity to prepare many desserts. The recipe I want to tell you about today is for soft and very tender Strawberry Muffins, perfect for breakfast, but also for a snack or any time of the day. The recipe is really simple and quick, even foolproof for those less skilled in the kitchen… easier than this! I added to the mixture a jar of plain yogurt, but you can also choose to use strawberry yogurt, and the result is a super softness that conquers with the first bite. Few and simple ingredients, and I can only let you imagine the delicious aroma that instantly filled my house as soon as I took my Strawberry Muffins out of the oven. Ingredients for Strawberry Cakes

  • 1 egg
  • 2/3 cup sugar
  • 1 cup flour
  • 1 jar plain yogurt (or strawberry yogurt)
  • 3 tbsp butter (melted)
  • 9 oz strawberries
  • 1/2 lemon zest (untreated)
  • 1/2 packet baking powder (8 grams)
  • as needed powdered sugar (for decoration)

What You Need to Prepare Soft Strawberry Muffins

  • Mixer
  • Muffin Tin
  • Baking Cups

How to Prepare Strawberry and Yogurt Muffins

  • Wash the strawberries, clean them, and cut them into small pieces. Beat an egg with the sugar for 3-4 minutes until you have a light and frothy mixture.

  • Add a jar of plain yogurt and the melted butter. Mix. Continue by adding the grated zest of half an untreated lemon, the sifted flour, and the baking powder.

  • Mix well. Also, add the strawberries and simply mix with a spatula to incorporate them into the batter.

  • Place the paper liners in the muffin tray. Fill each liner 2/3 full with the batter.

  • Bake the Soft Strawberry Muffins in the preheated static oven at 350°F for 18-20 minutes.

  • Always do the toothpick test to check if they’re cooked inside. Let them cool and decorate as desired with some powdered sugar.

Loredana’s Tips

The Muffins stay soft in a container for 2-3 days

If you prefer, you can replace the butter with 3 tbsp of vegetable oil and the yogurt with 1/2 cup of milk

If you don’t have a muffin tin, you can simply use silicone molds

For more indulgent treats, you can add 2 oz of chocolate chips or the same amount of dark chocolate in small pieces to the batter
