BLUEBERRY PANCAKES the best breakfast there is

Soft and delicious blueberry pancakes. You know those soft, typically American pancakes served at breakfast, drenched in maple syrup and fresh fruit? Here are the Pancakes that I like to prepare from time to time for breakfast, especially on Sundays or holidays when we can take our time and prepare a leisurely and special breakfast for our family. What I want to tell you about today is the simple recipe to prepare soft and fluffy Blueberry Pancakes. They’re really simple and quick to prepare, and I leave it to you to imagine how good they are! My recipe is without butter and oil, just a bit of butter to grease the pan. I served them with some warm honey that I honestly prefer to the more classic maple syrup, but feel free to choose how to top them— even a simple sprinkle of powdered sugar is great. Ingredients for Blueberry Pancakes with Honey

  • 1 egg
  • 1 cup blueberries
  • 1/4 cup sugar
  • 2/3 cup plain yogurt
  • 1 1/4 cups flour
  • 1 teaspoon baking powder (about 4 grams)
  • to taste honey (for garnish)
  • 1 oz butter (to grease the pan)

How to Make Blueberry Pancakes

  • Wash the blueberries and let them drain on paper towels. Beat the whole egg with the sugar for 2-3 minutes until you have a light and fluffy mixture.

  • Add the plain yogurt and mix. Continue by adding the sifted flour and baking powder. Finally, add the blueberries and gently fold them into the batter with a spatula.

  • Butter a non-stick pan and heat it up. Pour 2 ladles of batter and cook the pancakes over medium heat. As soon as bubbles form on the surface, it’s time to flip the pancakes.

  • Carefully flip the pancake with a spatula and let it cook for another 1-2 minutes on the other side.

  • Prepare all the pancakes without butter in the same way until all the batter is used up.

  • Place them on a plate, drench them with honey and lots of fresh blueberries.

Loredana’s Tips

You can prepare the pancake batter in advance and store it in a container in the fridge for a day. For example, you can prepare it the night before, and in the morning you’ll just need to cook your pancakes.

If you have leftover cooked pancakes, store them in a container. Just reheat them for a few minutes in the microwave or oven to make them taste like freshly made.

If you prefer, you can replace the plain yogurt with blueberry yogurt.
