Soft, fluffy, and delicious whole wheat apple and orange plumcake. I love starting the day with a slow breakfast, my indispensable cup of milk and coffee, and a slice of a genuine homemade cake. When I haven’t made a cake, I have to settle for whole grain cereals. The recipe for the cake I want to tell you about today is perfect for breakfast. An Apple cake with whole wheat flour to which I also added the juice and zest of an orange for a fantastic result. A super fluffy, ultra-soft, and irresistibly good Apple and Orange Plumcake! For me, Apple desserts are the ones that most smell like home and the genuine pastries my grandma used to make. In fact, my grandma made very few simple desserts, including a wonderful Apple cake that, if I close my eyes, I can still smell its delicious aroma. Ingredients for the Apple and Orange Cake
- 2 eggs
- 110 g sugar
- 3 1/3 tbsp vegetable oil
- 1 orange (untreated)
- 2 apples
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/2 packet baking powder (8 grams)
- as needed powdered sugar (for decoration)

How to prepare the Whole Wheat Apple and Orange Cake
Wash the orange. Grate the zest and squeeze it to extract the juice. Peel the apples, clean them, and cut one into cubes and the other into thin slices. Beat the 2 eggs with the sugar, ideally with an electric mixer, for 7-8 minutes until you have a light and frothy mixture.
Add the vegetable oil, orange juice, and zest to the eggs. You need about 3.5 oz of orange juice, if one orange is not enough add more juice. Mix.
Add the all-purpose flour, whole wheat flour, and baking powder. Mix well. Lastly, add the diced apple and mix with a spatula.
Oil or line a loaf pan with parchment paper; mine measures 8 x 4.5 inches. Pour the batter into it, leveling it with a spatula.
Finish by adding the apple slices on top, letting them sink slightly into the batter. Bake the Apple Plumcake in a preheated oven at 356°F in static mode for 35-40 minutes. Always do the toothpick test to check the cake’s doneness inside.
Let the cake cool before transferring it to a serving plate. Decorate as desired with some powdered sugar.
