Few simple ingredients capable of creating small masterpieces. Just like the recipe I want to share with you today: Rolled shortcrust cookies filled with hazelnut cream. A soft and delicious cookie that wins over with the first bite. These Rolled cookies with Nutella are perfect for breakfast, but also for a snack or whenever you simply want a small sweet treat. For the shortcrust pastry, I used my Soft shortcrust pastry recipe with little butter and yogurt in the dough, which makes it super soft. And if you don’t want to fill with Nutella, you can choose the flavor of jam or preserve you prefer and your cookies will be just as special. Ingredients for Cookies with Nutella
- 1 egg
- 1/2 cup sugar
- 1/2 cup plain yogurt
- 2 1/4 cups flour
- 4 tbsps butter
- 1/2 lemon zest (untreated)
- 1 tsp baking powder (4 grams)
- 1 pinch salt
- 1 1/4 cups Nutella®
How to Make the Rolled Shortcrust Pastry with Nutella
You can prepare the shortcrust pastry by hand or with a mixer. Put the flour, sugar, baking powder, a pinch of salt, and the grated zest of half an untreated lemon into a bowl. Also add the softened butter cut into small pieces and mix well.
Also add an egg and the plain yogurt. Mix well until you have a soft but not sticky dough. Form into a ball, wrap it in cling film, and let it rest in the fridge for at least 30 minutes.
Take the shortcrust pastry and roll it out on a lightly floured surface to a thickness of about 1/8-1/4 inch to form a large rectangle. Spread the Nutella over the entire surface in a thin layer using a spatula.
Now roll the shortcrust pastry from the shorter side to form a Filled Roll. Place it on a baking sheet lined with parchment paper. Bake the Filled Roll with Nutella in a preheated oven at 350°F in static mode for 25-30 minutes or until golden brown. Let it cool slightly, then slice it into pieces about 1/2-3/4 inch thick.
