  • 1 cup vinegar
  • 1 tsp sugar
  • 1 leaf bay leaf

Steps for Preparing Fermented Garlic

To prepare the fermented garlic, start by sterilizing a glass jar that will be used as a container.

  • Peel the garlic cloves. To make peeling easier, you can soak the garlic heads in hot water for a few minutes, or gently peel them with a knife blade. Once peeled, rinse them briefly in cold water and dry with a paper towel

  • Meanwhile, take a saucepan, add the water and bring to a boil. Blanch the garlic in boiling water for 2-3 minutes. Then, drain the cloves and let them cool.

    In a pot, combine vinegar, water, sugar, salt, bay leaves, and cloves. Bring the mixture to a boil and cook for about 5 minutes over medium heat.

    Place the sterilized garlic cloves in glass jars. Add the herbs you desire, such as chili pepper.

    Pour the still-hot vinegar solution over the garlic cloves in the jars, ensuring they are completely submerged.

    Seal the jars with airtight lids.

    Let the jars cool at room temperature.

    Once cooled, store them in the refrigerator. The marinated garlic will be ready to consume after about 1-2 weeks, but for a more intense flavor, you can wait up to a month.

Tips and Storage

Choose firm garlic cloves free from mold or sprouts. Fresh garlic has a fuller and more intense flavor, which will result in a better final product.

You can experiment with different spices and herbs to customize the flavor of your marinated garlic. Coriander seeds, rosemary, or chili pepper can add unique aromatic notes.
