Ingredients for the Cookies with Eggs

  • 1 egg
  • 1 yolk
  • 7 tbsp sugar
  • 4 tbsp butter
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder (4 grams)
  • 1 lemon zest (untreated)
  • 4 tbsp milk
  • 1 1/2 tbsp sugar
  • 20 eggs (colored or chocolate)

How to prepare Easter Cookies

  • You can prepare the dough by hand or with the help of a mixer. Mix the softened butter in small pieces with sugar and flour in a bowl. Add a whole egg and a yolk. Mix.

  • Continue the preparation by adding the grated zest of an untreated lemon and a teaspoon of baking powder. Knead quickly until you have a soft but not sticky dough. Shape it into a ball, wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.

  • Take the dough. Cut a portion and roll it on a lightly floured work surface to form a roll about 8 inches long. Fold it in half and twist the two ends, they will be the ears of your bunnies. Widen the folded part, trying to have a space wider than the egg that you will insert later, as it tends to shrink during baking.

  • Place the Cookies slightly spaced on a baking sheet lined with parchment paper. Brush them with milk and sprinkle them with granulated sugar. Bake the bunny cookies in a preheated static oven at 340°F for 16-18 minutes or until golden.

  • Remove the cookies from the oven, let them cool slightly and insert a colorful egg into the hole of each shortbread bunny. Sprinkle them as desired with powdered sugar.
