Have you ever tried sage in batter? If not, then you absolutely need to catch up, it will surely surprise you! The taste of sage combined with the crunchiness of my eggless batter is something incredibly enticing and appetizing.
Moreover, the baking method, not frying, makes them light and easy to digest.
Sage has multiple properties. Firstly, digestive, then diuretic and anti-inflammatory. Used to flavor many dishes, in this case, it acts as the main ingredient.
Ideal to serve as an appetizer, side dish, or as an accompaniment to a cocktail with friends.

Ingredients
- 3/4 cup type 1 flour
- 3/4 cup chilled beer
- 1.75 oz sage
- to taste fine salt

Steps for preparing sage in batter
Let’s start by preparing the batter. So, take a bowl, add the flour and salt, and finally the chilled beer.
Mix well with a fork until you get a smooth and lump-free dough. I used stone-ground type 1 flour, as I never use the refined 00 type.
Then cover the bowl with a lid or a cloth and place it in the fridge for fifteen minutes. In the meantime, clean, wash, and then dry with paper towels or a cloth, the sage leaves. They must absolutely not have any water.
After the resting time, take the batter out of the fridge, take two sage leaves at a time, and dip them in the batter, first on one side and then the other.
Next, line a baking tray with parchment paper, I used my fantastic resin mat, and place them a few inches apart. Finish by baking them at 356°F for about 15 minutes, until golden brown. After the cooking time, take them out of the oven and serve hot. For the more indulgent, you can use the same recipe and fry them. You can also cook them in an air fryer at 338°F for a few minutes.
Tips and notes
It’s advisable to consume the sage in batter hot so that it remains crispy. Cooling down too much might cause it to lose some of its original crispiness.
