Simple and quick to prepare, they are excellent at any time of the day, starting from breakfast, as they give you the right boost to face the day thanks to the caffeine contained. Moreover, they are butter-free and made with whole cane sugar.
Ideal to serve at birthday parties or with friends. Also, being single-serving, they are very convenient to take as a snack or on outings.

Ingredients for preparing the coffee muffins
- 2 eggs
- 5.6 tbsp vegetable oil
- 1/2 cup whole cane sugar
- 1 2/3 cups type 1 flour
- 1/2 cup milk
- 3 tsp instant coffee
- 1/2 cup chocolate chips
- 1 pinch salt
- 1 packet baking powder

- 6 Cupcake liners

- 1 Coffee machine
Steps for preparing the coffee muffins
To prepare the delicious muffins, start by taking a small saucepan and adding the milk. Then place it on the fire and let it warm up. Add the whole cane sugar, which is very dense, allowing it to dissolve perfectly, and let it cool. Then add a cup of coffee prepared with the very convenient Bialetti coffee machine
Next, take a bowl and add the eggs with a pinch of salt. Then, with the electric whisk beat until you get a nice frothy mixture. Then, still whisking, add the milk with the coffee and sugar, followed by the vegetable oil in a stream, and finally the flour and baking powder.
At this point, we will have a nice dark coffee-colored mixture, and we can add the chocolate chips. Use a spatula to mix well, stirring from top to bottom. Finish by using a muffin mold where we will insert the paper liners and pour our batter. Finish by decorating the center of the muffins with some chocolate chips and bake at 356°F for about 20 minutes.
Once the time has passed, remove from the oven, let cool, and finally serve. Enjoy!
