Blueberry muffins that are super soft and delicious. How good are blueberries , a fruit I unfortunately can’t often find in my area, and I often have to settle for frozen ones. But the other day, I found a nice tray of fresh blueberries at the supermarket and couldn’t resist. Actually, I had already had a recipe in mind for a while to prepare super soft Blueberry Muffins. And so, here they are, prepared in just a few minutes, the best muffins you’ve ever tasted. Blueberries are a fruit, or more precisely a berry of a shrub that grows in mountainous areas and is native to northern Europe and North America. Blueberries are a source of valuable compounds, including vitamins (A, D, and E), folic acid, minerals (such as phosphorus, potassium, and magnesium), and organic acids. They have anti-inflammatory and anti-aggregating properties, vasodilatory and antioxidant effects, and are therefore very useful for the cardiovascular system. More reasons to eat them and use them in the kitchen. I personally find them delicious to eat with a little sugar and lemon juice, but they are at their best in desserts. In fact, during cooking, the small blue berries swell and burst, releasing their delicious flavor and color. I made the soft blueberry muffins by adding a jar of plain yogurt to the batter for a special softness. So, have I convinced you to try them? Ingredients for Blueberry Muffins
- 1 egg
- 2.8 oz sugar
- 1 jar plain natural yogurt
- 3.9 oz all-purpose flour
- 1.4 oz butter (melted)
- 3.5 oz blueberries
- 1/2 lemon zest (untreated)
- 1 tsp baking powder (5 grams)
- to taste powdered sugar (for decoration)
What you need to make Blueberry Muffins
- Mixer
- Muffin Pan
- Cupcake Liners
How to Make Soft Blueberry Muffins
Wash the blueberries and let them drain well. Beat the egg with the sugar, preferably with a mixer, for 3-4 minutes until you have a light and frothy mixture.
Add the melted butter and a jar of plain yogurt. Mix. Continue by adding the sifted flour, baking powder, and the grated zest of half an untreated lemon. Mix.
Finish by adding the blueberries and gently folding them into the batter with a spatula. Place the paper liners in a special muffin pan.
Fill the liners 2/3 full with the batter. With these quantities, I got 7 muffins, but it depends on the size of the liners you use. You can also use silicone liners; in that case, you can simply place them on a tray slightly apart.
Bake the blueberry and yogurt muffins in a preheated static oven at 356°F (180°C) for 20-22 minutes.
Always use the toothpick test to check for doneness inside. Let them cool and sprinkle with powdered sugar if desired.
